In 2000, another transition occurred in her life when she moved to volunteer in the finance office and kitchen at St. Rose Convent. She had a great passion for Ecospirituality, which she wove into most of her conversations and actions. She later went back to her baptismal name. Louise, her sister, spoke often about going to the convent and finally decided on the Benedictines in Missouri. Impressive! Sister Kathleen Theresa was born to Joseph and Antoinette (Blum) Kenkel on September 17, 1929, on the family farm in Earling, Iowa. In 1949, she entered the novitiate of the Franciscan Sisters of Perpetual Adoration in La Crosse and was given the name Sister Anysia. Eventually she was able to recruit an alumna to continue her work when she left. Growing up she would often work with her father in his woodshop in the basement--thus her love and skill at woodworking. Sister Evelyn entered St. Rose Convent in the fall of 1958. Yermo High School in El Paso. From her mother, she learned the importance of family as well as the artistry and necessities of cooking, cleaning, sewing and gardening. She was in the midst of writing a book on Pieces of the Parchment-Rubrics for Daily Living. Sister Kathleen taught elementary and junior high school from 1950 to 1963 at schools in Wausau, Superior, Mosinee, Platteville and Lima (Wisconsin), Guttenberg (Iowa) and Spokane, Washington. She also taught in Blackfoot, Idaho and St. Paul, Iowa.
